Strawberry and Soy Yogurt Pastries
Ingredients
- Strawberries 15 oz
- Sugar 3½ tablespoons
- Lemon Juice 2 tablespoons
- All-purpose flour 1¼ cups
- Baking Powder 1 teaspoon
- Baking Soda ½ teaspoon
- Margarine 2 tablespoons
- Salt ¼ teaspoon
- Soy yogurt 5 oz
- Soy cream 0 fl oz
Step-by-Step Guide
Step 1
For the filling, mix strawberries, sugar, and lemon juice.
Step 2
For the pastries: Preheat the oven to 230°C (450°F).
Step 3
Grease a baking sheet with cooking spray. In a bowl, mix flour, baking powder, sugar, baking soda, and salt.
Step 4
Add margarine and rub it in with your hands until crumbly.
Step 5
Add yogurt until a soft dough forms.
Step 6
Roll out the dough into a square about 1-1.5 cm thick on a floured surface. Cut out circles with a diameter of 6 cm.
Step 7
Form the remaining dough into 4 more circles.
Step 8
Place on the prepared baking sheet. Bake for 9-11 minutes until golden brown.
Step 9
Slice the pastries in half, placing the bottom halves on plates. Top each with 3 tablespoons of strawberries and then 3 tablespoons of whipped cream.
Step 10
Place the top half of the pastry on top, along with the remaining strawberries and cream.
