Ingredients

  • Wheat Flour 5 lbs
  • Dry yeast 0 oz
  • Water 5 fl oz
  • Sugar 20 oz
  • Milk 15 fl oz
  • Butter 5 oz
  • Salt a pinch
  • Clarified Butter 10 oz
  • Powdered Sugar 5 oz
  • Vanillin 0 oz
  • Whole egg 3 pieces
  • Vegetable Oil 0 fl oz

Step-by-Step Guide

Step 1

Prepare the dough using the sponge method — combine the yeast, water, and flour (350 g) and let it rest for 2 hours.

Step 2

In a separate bowl, place the softened butter and cream it for 5-7 minutes, then add sugar, eggs, vanillin, salt, and continue to cream until a homogeneous mass is obtained.

Step 3

Pour this mixture into the sponge and mix for 3-4 minutes.

Step 4

After that, while stirring continuously, gradually add the flour (1 kg), knead the dough, and place it in a warm place to rise for 35-40 minutes.

Step 5

To prepare the filling, cream the clarified butter, add flour (700 g), mix thoroughly, add powdered sugar, and cream until a homogeneous crumbly mass is obtained.

Step 6

Divide the prepared dough into pieces, shaping them into balls.

Step 7

Roll each piece into sheets 1.5-2 mm thick. Brush the surface of the sheets with melted butter. Then fold the sheet like an envelope and brush with butter again.

Step 8

Place the filling on the prepared dough, bring the edges of the dough together from all four sides, forming a round shape.

Step 9

Then flip it over and gently roll it out so that the entire sheet of dough is of uniform thickness.

Step 10

Pinch the edges of the pastry, let it rise, brush the surface with egg yolk, and poke holes in several places.

Step 11

Place the gata on a greased baking sheet and bake in a preheated oven for 30-35 minutes.
