Spring Carrot and Potato Soup

Ingredients

  • Vegetable Oil 1 tablespoon
  • Onion 1 head
  • Garlic 2 cloves
  • Celery root 5 oz
  • Potato 15 oz
  • Carrot 20 oz
  • Vegetable Broth 25 fl oz
  • Thyme 1 tablespoon
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Peel and chop the onion and garlic. Peel and roughly chop the carrot, potato, and celery root.

Step 2

Heat the vegetable oil in a pot, add the onion and garlic. Sauté until soft, then add the remaining vegetables.

Step 3

Pour in the hot broth. Bring to a boil, reduce heat, and cook covered for 30-40 minutes.

Step 4

Add the thyme and remove from heat. Blend the soup with an immersion blender until smooth. Add spices to taste.

Step 5

Serve the finished soup, garnished with chopped herbs.
