  • Sugar 5 oz
  • Vanilla salt 0 oz
  • Wheat Flour 0 oz
  • Cocoa Powder 0 oz
  • Condensed Milk 0 oz
  • Chocolate 5 oz
  • Mascarpone Cheese Unagrande 5 oz

Step-by-Step Guide

Step 1

Preheat the oven to 410°F. Mix vanilla sugar with regular sugar. Beat 2 eggs and 2 yolks with 100 g of sugar until fluffy and white — the mixture should increase 2-3 times in volume.

Step 2

Sift in the flour and cocoa powder, and mix.

Step 3

Whip the remaining 2 egg whites with a pinch of salt and the remaining sugar (20 g) until white and smooth, then gently fold into the batter with a spatula using an upward motion. The mixture should not deflate. Line a standard baking tray with parchment paper or a silicone mat. Pour in the batter, smooth it out, and bake for about 10-12 minutes in the hot oven. Check your oven, as the time may vary.

Step 4

Remove the baked sponge from the tray, take off the paper, and let it cool slightly.

Step 5

Meanwhile, prepare the cream: beat the mascarpone and condensed milk with a mixer or whisk until smooth.

Step 6

Cut the cooled sponge into 2 equal parts, trimming the edges. Spread cream on one half and cover it with the second half.

Step 7

Cut the finished cake into pastries (I got 4 pastries, each measuring 15x7 cm. You can make them any size you like).

Step 8

Melt the chocolate and spread it on the top and sides (optional). Place in the refrigerator until the chocolate hardens (about 20 minutes).
