Sponge Cake with Jam and Candied Fruits
Ingredients
- Chopped almonds 5 oz
- Sugar 15 oz
- Farm fresh eggs 9 pieces
- Vanilla Biscotti ¼ cup
- Croutons ¼ cup
- Jam 5 oz
- Candied fruits 5 oz
- White Chocolate 5 oz
- Fresh Berries to taste
Step-by-Step Guide
Step 1
Preheat the oven to 390°F.
Step 2
Separate the egg yolks from the whites. Whip 4 egg whites until stiff peaks form.
Step 3
Chop 100 grams of almonds, mix with 150 grams of sugar, add 4 egg yolks one at a time, then stir in the ground vanilla biscotti. Gently fold in the whipped egg whites.
Step 4
Pour the prepared batter into two greased and floured pans and bake in the oven for about 20 minutes.
Step 5
Grind the remaining almonds and mix thoroughly with the remaining sugar, 2 egg yolks, and 3 whole eggs. Gradually fold in the sifted rye croutons. Pour the batter into the pan and bake similarly for a dark layer.
Step 6
Mix the jam with the candied fruits.
Step 7
Layer the cooled cakes alternately, spreading the jam with candied fruits in between.
Step 8
Cover the finished cake with melted white chocolate and decorate with fresh berries.
