Step-by-Step Guide

Step 1

Separate the egg whites from the yolks. Place the egg whites in a cold place or in cold water. Whisk the yolks with sugar until light (you can add vanillin), then add the flour, mix, and gently fold in the beaten egg whites into the batter from the bottom up.

Step 2

Pour the batter into a greased and lightly floured mold. Fill the mold to ¾ of its height and place it in the oven at medium heat to bake.

Step 3

The finished sponge cake will easily pull away from the edges of the mold, and a skewer inserted into the cake will come out dry. Turn the sponge cake out onto a sieve and let it cool, then cut it in half horizontally.

Step 4

Spread jam without seeds on each layer and restore the sponge cake to its original shape. You can cover the top with icing, decorate with berries, candied fruits, nuts, then place it on a plate with a napkin and cut it with a thin sharp knife.
