Sponge Cake with Cream Cheese and Chocolate Frosting
Ingredients
- Sugar 0 oz
- Egg white 1 piece
- Vanilla salt 1 tablespoon
- Wheat Flour 0 oz
- 10% cream 5 fl oz
- Ricotta cheese 5 oz
- 70% Dark Chocolate 5 oz
- Powdered Sugar 1 tablespoon
Step-by-Step Guide
Step 1
For the sponge, mix the powdered sugar and flour.
Step 2
Whip the egg whites until stiff peaks form. Add sugar and vanilla sugar, and whip until dense and glossy. Gradually fold in the sifted flour with powdered sugar using a spoon. The batter should be thick. Pour into a small ungreased mold (for a fluffier sponge) and place in a preheated oven at 355°F for 30 minutes. Once baked, invert the sponge onto a rack to cool.
Step 3
For the frosting, whip the ricotta with powdered sugar until creamy. Melt the chocolate in a double boiler and mix it into the ricotta until well combined.
Step 4
On the cooled sponge, cut into two layers, spread the frosting, and cover with the second layer.
Step 5
For the top frosting, whip the cream, and when it thickens, add the powdered sugar and whip until stiff peaks form. Cover the cake.
