Sponge Cake Tiramisu
Ingredients
- Sponge Cake Base 8 pieces
- Sugar 5 oz
- Instant coffee 0 oz
- 33% Cream 20 fl oz
- Cocoa Powder 0 oz
- Whole egg 5 pieces
- Mascarpone Cheese Unagrande 10 oz
- Vanilla salt ¾ teaspoon
Step-by-Step Guide
Step 1
Melt the sugar with the egg yolks in a water bath until fully dissolved, then add the cheese and vanilla sugar. Once the mixture is homogeneous, remove from heat and let cool.
Step 2
Whip the cream with a mixer until fluffy, then combine it with the egg mixture and mix well.
Step 3
Prepare a syrup by boiling 60 grams of water with 60 grams of sugar. Once cooled, add coffee (2 teaspoons of coffee for 60 grams of water).
Step 4
Soak the cut sponge cake pieces in the syrup and layer them in a serving dish, followed by a layer of cream, another layer of sponge cake, and another layer of cream. Dust with cocoa powder and refrigerate for 5 hours.
