Spinach Puree Soup
Ingredients
- Olive Oil 2 spoons
- Onion 1 head
- Minced garlic 3 cloves
- Ginger to taste
- Frozen spinach discs 15 oz
- Chicken Broth 10 fl oz
- Potato 1 piece
- Meyer Lemon Juice 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
1. Heat oil in a pot. Add garlic, onion, and ginger (I used a piece about 3 cm), all finely chopped, and sauté for 3-4 minutes until softened.
Step 2
2. Add the spinach and lemon juice to the pot. Once the spinach has wilted, add the broth (250ml) and the potatoes (I used boiled potatoes, so I added them before blending everything), and bring to a boil. Reduce the heat and cook for 10 minutes.
Step 3
3. Pour into a blender or food processor and blend until smooth.
Step 4
4. Return the soup to the pot and season with salt and pepper to taste. If it seems too thick, you can add the remaining broth or water. Bring to a boil.
