Spinach Pies
Ingredients
- Puff Pastry 10 oz
- Chicken Egg 1 piece
- Spinach 15 oz
- Butter 0 oz
- Semi-soft cream cheese 0 oz
- Grated Pecorino Pepato Cheese 0 oz
- Garlic 1 clove
- Dried Dill Stems ¼ teaspoon
- Nutmeg to taste
- Meyer Lemon Juice to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Place the spinach in a pot, add salt, cover with a lid, and set over medium heat for 2-3 minutes. Stir, drain in a colander, and press to remove excess liquid.
Step 2
Transfer the greens to a bowl, whisk together with butter, cheese, cottage cheese, minced garlic, and dill. Season with nutmeg, salt, pepper, and lemon juice, and let cool.
Step 3
On a floured surface, roll out the dough into a thin layer and cut out 6 circles. Place the spinach filling in the center of each, seal the pies, brush them with beaten egg, and place on a greased baking sheet.
Step 4
Make a hole in the center of each pie. Bake at 430°F (428 degrees Fahrenheit) for about 15 minutes, until golden brown.
