Ingredients
- Fresh basil leaves 10 oz
- Ricotta cheese ½ cup
- Grated Pecorino Pepato Cheese 0 oz
- Large eggs 2 pieces
- Garlic 1 clove
- Salt ¼ teaspoon
- Ground Black Pepper ¼ teaspoon
Step-by-Step Guide
Step 1
Preheat the oven to 390°F.
Step 2
In a blender, blend the spinach until smooth (preferably in batches) and transfer to a bowl. Add the ricotta, Parmesan, lightly beaten eggs, minced garlic, salt, and pepper. Mix well.
Step 3
Grease 8 muffin cups with vegetable oil and fill them with the spinach-cheese mixture (the cups should be full).
Step 4
Bake for about 20 minutes until cooked through. Leave in the pan for 5 minutes and transfer to a plate. Serve warm, sprinkled with Parmesan.
