Spinach cream soup with ginger

Ingredients

  • Spinach 15 oz
  • Potato 1 piece
  • Onion 1 piece
  • Meyer Lemon Juice 1 teaspoon
  • Ginger 0 oz
  • Olive Oil 2 tablespoons
  • Garlic 3 cloves
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Wash the spinach leaves well, place them in a pot, and cover with water. Bring the water to a boil and cook covered on low heat for 5 minutes.

Step 2

In another pot, heat the oil. Add chopped garlic, onion, and ginger, and sauté for 3–4 minutes until soft.

Step 3

Add the spinach and pour in the lemon juice. Add the potato and a little of the water used to cook the spinach, bring to a boil. Reduce the heat and cook for 10 minutes.

Step 4

Transfer the soup to a blender and puree until smooth.

Step 5

Return the soup to the pot, season with salt and pepper to taste. Bring to a boil.

Step 6

When serving, you can add cream to the finished dish.
