Spinach and ricotta casserole
Ingredients
- Fresh basil leaves 10 oz
- Ricotta cheese 10 oz
- Chicken Egg 2 pieces
- Corn Flour for Polenta 2 spoons
- Coarsely Ground Rye Flour 2 spoons
- Salt a pinch
- Olive Oil ½ spoons
Step-by-Step Guide
Step 1
Wash the spinach and let it drain. Heat a pan without oil, add the spinach, and cover with a lid. Sauté for 10 minutes over low heat.
Step 2
Transfer the sautéed spinach to a bowl and gently mash it. Add the whisked eggs, both types of flour, ricotta, and salt. Mix well and let it sit for 15 minutes.
Step 3
Preheat the oven to 375°F. Grease a baking dish with olive oil and spread the cottage cheese mixture in it. Bake in the oven for 35-40 minutes.
Step 4
Serve warm or chilled.
