Spicy Zucchini Jam

Description
Since cooked zucchini has a rather dull color, you can use colorings that not only add color but also contribute to the flavor, such as turmeric and ground sweet paprika.
Ingredients
- Star anise 2 pieces
- Courgette 5 lbs
- Spanish onions 4 heads
- Ginger 0 oz
- Cinnamon 1 piece
- Red Wine Vinegar 5 fl oz
- Raw cane sugar 5 oz
- Olive Oil 5 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Remove the seeds from the zucchini and cut them into large cubes.
Step 3
Grate the ginger root using a fine grater.
Step 4
Finely chop the onion and sauté it in olive oil in a deep skillet until soft.
Step 5
Add the zucchini to the saucepan, mix with the onion, and simmer until the zucchini is tender.
Step 6
Add grated ginger, star anise, a cinnamon stick, wine vinegar, a pinch of salt, sugar, cayenne pepper, and one or two tablespoons of paprika.
Step 7
Simmer on low heat, stirring occasionally, for about forty minutes.
Step 8
After that, remove the saucepan from the heat, let its contents cool, and serve as a dessert (including as an accompaniment to cheese) or as a side dish with meat.
