Description
Prepare the vegetable broth in advance (a day before use).
Ingredients
- Leek 1 piece
- Carrot 4 pieces
- Onion 2 pieces
- Celery stalk 2 pieces
- Garlic 3 cloves
- Star anise 1 piece
- Ground coriander ½ teaspoon
- White Pepper (whole) ½ teaspoon
- Basil 1 bunch
- Parsley 1 bunch
- Chervil 1 bunch
- Scallions 1 bunch
- Lemon ¾ piece
- Dry White Wine 5 fl oz
Step-by-Step Guide
Step 1
Place the vegetables and garlic in a large skillet. Cover with water (about 1 liter) to completely submerge the vegetables. Bring to a boil. Skim off the foam, reduce the heat, and simmer uncovered for about 8 minutes.
Step 2
While the vegetables are cooking, grind the star anise, coriander seeds, and white pepper. After 8 minutes, add the spices, herbs, and lemon quarters to the vegetables.
Step 3
Keep on low heat for another couple of minutes, turn off the heat, and pour in the wine. Let the broth cool.
Step 4
Transfer to a suitable container, cover, and refrigerate for 24 hours.
Step 5
The next day, strain the broth through a sieve, discarding the vegetables. Store the vegetable broth in the refrigerator covered.
