Ingredients

  • Wheat Flour 2 glasses
  • Mild Chili Spice ½ spoons
  • Cayenne Pepper ½ spoons
  • Butter 5 oz
  • Milk ½ glasses
  • Ocean salt to taste
  • Hard Cheese 15 oz

Step-by-Step Guide

Step 1

Pour the flour into a bowl and add the spices.

Step 2

Cut the butter into cubes (it should be taken out of the refrigerator in advance to warm up and become pliable) and add it to the flour. Rub the flour into the butter and the butter into the flour until you achieve a crumbly texture similar to cornmeal.

Step 3

Add grated cheese to the crumbs and mix thoroughly by hand.

Step 4

Next is a very crucial step: adding liquid (milk). The amount depends on the fat content of the cheese, for example. Slowly, using teaspoons, we add milk to the cheese-flour mixture and try to achieve a consistency that allows us to first form a ball and then roll it out into a sheet of dough. The key is not to overdo it. If there is leftover milk (or if it wasn't needed at all), that's also fine.

Step 5

Once we have achieved the desired result, we preheat the oven to 430°F and line a greased baking tray with parchment paper.

Step 6

Roll the dough out to a thickness of just under a centimeter and, using a sharp knife, cut it into strips. Arrange the strips closely in neat rows on a baking tray. It's important to place them tightly, as this amount of ingredients yields a lot of strips.

Step 7

Once all the future sticks are arranged, sprinkle them with coarse sea salt (it's not toxic and has a very pleasant crunch). You can experiment with herbs, peppers, spices, and sesame.

Step 8

Bake at 390°F for 20 minutes.
