Spicy carrot soup with ginger
Ingredients
- Carrot 25 oz
- Coriander essential oil 1 tablespoon
- Mustard Greens ½ spoons
- Peanut Butter 3 spoons
- Curry ½ spoons
- Ginger 0 oz
- Onion 2 heads
- Orange zest 2 spoons
- Chicken Broth 0 qt
- Lime Juice 2 spoons
- Yogurt powder to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Grind the coriander and mustard seeds in a pepper mill. Heat liquid peanut oil in a skillet and add the ground spices and curry. Stirring, cook for about a minute.
Step 2
Add grated ginger, finely chopped onion, and sliced carrots. Season with salt and pepper, and sauté for about three minutes until the onion becomes soft.
Step 3
Pour in the broth, leaving about a cup aside just in case. Bring to a boil, then reduce the heat and simmer for thirty minutes until the carrots are tender. After that, let it cool slightly and blend with an immersion blender.
Step 4
Add lime juice. If the soup is too thick, add more broth. Season with salt and pepper. In the bowl, drizzle with yogurt.
