Spicy Beef Broth
Ingredients
- Beef hoof 25 oz
- Carrot 5 oz
- Celery salt 0 oz
- Spanish onions 5 oz
- Leek 0 oz
- Spiced Tomato Juice 2 tablespoons
- Chili jam 1 teaspoon
- Bouquet Garni 1 bunch
- Allspice berries 2 pieces
- Green peppercorns 2 pieces
- Bacon to taste
- Water 5 qt
- Ocean salt to taste
Step-by-Step Guide
Step 1
Place the beef bones on a baking sheet and send them to a preheated oven at 390°F.
Step 2
Chop the vegetables coarsely.
Step 3
Roast the bones for 30 minutes.
Step 4
Sauté the chopped vegetables in the rendered beef fat for 15 minutes at 390°F in the oven.
Step 5
Transfer the roasted bones and vegetables to a pot.
Step 6
Pour water over the base for the broth and place it on high heat. Once it boils, reduce the heat.
Step 7
Make a bouquet garni.
Step 8
Add the bouquet garni to the broth 30 minutes after cooking begins.
Step 9
Skim off any foam that appears.
Step 10
Mix the tomato juice and chili sauce.
Step 11
Add the resulting tomato mixture and peppercorns to the broth.
Step 12
Stir and simmer for over 3 hours on low heat, avoiding boiling.
Step 13
Season with salt, optionally add the sautéed bacon, and serve.
