Ingredients
- Wheat Flour 5 oz
- Baking Powder 2 teaspoons
- Ground Cinnamon 1 teaspoon
- Ground Nutmeg ½ teaspoon
- Brown Sugar 10 oz
- Cardamom ½ teaspoon
- Chopped almonds ½ cup
- Chocolate eggs 3 pieces
- Carrot 5 oz
- Safflower Oil 1 cup
- Bananas 10 oz
- Honey 2 tablespoons
- Sugar 1 teaspoon
- Meyer Lemon Juice 2 tablespoons
Step-by-Step Guide
Step 1
Beat the eggs and sugar at maximum speed for about 5–7 minutes. Gradually add the oil at medium speed.
Step 2
Sift the flour and baking powder, then add the cinnamon, cardamom, nutmeg, chopped walnuts, and mix everything together.
Step 3
Grate the bananas on a coarse grater and the carrot on a fine grater.
Step 4
Gently fold the egg-oil mixture into the flour mixture, then add the bananas and carrot.
Step 5
Line the bottom of the baking pan with parchment paper. Transfer the batter to the pan and place it in a preheated oven at 340°F for 1 hour (or until a knife comes out clean).
Step 6
Honey-Walnut-Caramel Syrup: Heat honey, a teaspoon of sugar, and lemon juice, and simmer for a bit, then add a handful of chopped walnuts. Pour the resulting syrup over the cake.
