Spicy apple-carrot soup

Ingredients

  • Carrot 20 oz
  • Pickled Apples 10 oz
  • Olive Oil 2 spoons
  • Spanish onions 2 heads
  • Ginger 0 oz
  • Chicken Broth 0 qt
  • Apple juice with pulp 5 fl oz
  • Nutmeg ¼ spoons
  • Ocean salt to taste
  • Spices ¼ spoons
  • Fresh Mint to taste

Step-by-Step Guide

Step 1

Finely chop the onion. Peel all the carrots except one and cut them into small pieces. Peel all the apples except one and chop them as well. Peel the remaining carrot and cut it in half lengthwise. Chop the remaining apple very finely.

Step 2

In the bottom of a pot, sauté the onion in olive oil for about two minutes. Then add the ginger, all the carrots, and large pieces of apple. Pour in the broth, bring to a boil, reduce the heat, and simmer on low for twenty minutes.

Step 3

Finely chop the reserved carrot halves. Pour the remaining soup into a blender and blend until smooth. Then return it to the pot, stir in the apple juice, and season with the remaining spices.

Step 4

Ladle the soup into bowls, adding finely chopped apples, carrots, and sliced fresh mint to each.
