  • All-purpose flour 1½ cups
  • Butter 5 oz
  • Water 0 fl oz
  • Pumpkin 20 oz
  • Heavy cream 10 fl oz
  • Eggs 3 pieces
  • Salt ½ teaspoon
  • Ground Cinnamon to taste
  • Ground Ginger to taste
  • Ground Cloves to taste
  • Nutmeg to taste
  • Sugar 1 cup

Step-by-Step Guide

Step 1

Sift the flour. This will aerate it and enrich it with oxygen, making the dough fluffier. Add the butter and salt. Mix while gradually pouring in the cold water. Knead the dough well by hand. Then wrap the dough in plastic wrap and refrigerate for 30 minutes.

Step 2

While the dough is cooling, peel the pumpkin, remove the seeds, and cut it into cubes. We will need a large pot. Combine the pumpkin, cream, sugar, salt, and spices in it and cook over low heat for 20 minutes until the pumpkin is soft. Blend the mixture with a blender and let it cool.

Step 3

Roll out the dough thinly, grease the pie dish, and carefully place the dough in it, trimming any excess. Preheat the oven.

Step 4

Add the 3 eggs to the cooled filling and beat with a mixer. Gently pour the filling onto the pie crust.

Step 5

Bake for 50-55 minutes at 355°F.

Step 6

With the leftover dough, you can cut out leaves. Decorate the pie with them 10-15 minutes before it's done; by that time, the surface of the pie will have become firm enough.
