Ingredients
- Sugar 0.3 cups
- Ladyfinger Cookies to taste
- Butter 6 tablespoons
- Grated Ginger Root ¾ teaspoon
- Ricotta cheese 25 oz
- Brown Sugar 1 cup
- Farm fresh eggs 3 pieces
- Chestnut puree 1 cup
- Vanilla salt 1 teaspoon
- Ground Cinnamon 1 teaspoon
- Ground clove ¼ teaspoon
- Ground Nutmeg ¼ teaspoon
Step-by-Step Guide
Step 1
Preheat the oven to 355°F.
Step 2
Crush the gingerbread cookies to make 2 cups of crumbs. Transfer to a bowl.

Add white sugar, 0.25 teaspoons of ground ginger, and softened butter. Mix well and press the mixture into a round shallow baking dish, spreading it across the bottom and sides.

Bake the crust for 5 minutes.

Meanwhile, in a bowl, mix the ricotta with the eggs, adding them one at a time, then add brown sugar, pumpkin puree, vanilla, cinnamon, remaining ginger, cloves, and nutmeg. Mix everything well and pour over the crust.

Bake at 355°F for 60-70 minutes until set.
Step 7
Cool and refrigerate overnight.
