Ingredients

  • Butter 5 oz
  • Brown Sugar 0.7 cups
  • Sugar 0.7 cups
  • Large eggs 2 pieces
  • Ground Cinnamon 1½ teaspoons
  • Cardamom 1½ teaspoons
  • Grated Ginger Root 1½ teaspoons
  • Ground Cumin 1½ teaspoons
  • Ground clove ½ teaspoon
  • Ground Nutmeg ½ teaspoon
  • Salt a pinch
  • Ground Black Pepper a pinch
  • Baking Powder 1 teaspoon
  • Wheat Flour 2 cups
  • Coarsely Ground Rye Flour 2 cups
  • Egg white 1 piece
  • Meyer Lemon Juice ¼ teaspoon
  • Powdered Sugar 2 cups

Step-by-Step Guide

Step 1

Beat the butter and sugar together.

Step 2

Once the mixture is smooth, add the eggs, spices, and dry ingredients. Finally, add the flour until the mixture is thick (you may need a little more flour).

Step 3

Grease the baking sheet with butter.

Step 4

Roll out the dough to a thickness of 0.5 cm. Use a rolling pin to transfer the dough to the baking sheet and cut out shapes.

Step 5

Bake for 15 minutes at 345°F in the middle of the oven.

Step 6

When the cookies are dry and firm, remove them and cool on a rack.

Step 7

To decorate, prepare the icing. Whip the egg white with powdered sugar and lemon juice until the mixture forms peaks. If it doesn't rise and you've been whipping for a while, add more powdered sugar. Optionally, you can color the icing with food coloring.

Step 8

Apply the icing to the cookies using a piping bag or spatula. The sugar icing hardens as it cools.
