Ingredients
- Wheat Flour 10 oz
- Butter 5 oz
- Egg white 1 piece
- Powdered Sugar 5 oz
- Cocoa Powder 0 oz
- Bittersweet Chocolate 5 oz
- Baking Powder 0 oz
- Orange zest 1 piece
- Ground Cinnamon 2 teaspoons
- Cardamom ½ teaspoon
- Red Grape Juice 0 oz
- Nutmeg ¼ teaspoon
Step-by-Step Guide
Step 1
Mix together in one bowl: flour, cocoa, cinnamon, cardamom, and nutmeg. Add half of the powdered sugar — 60 g and the zest of 1 orange. When adding fresh zest to the dry mixture, do so gradually to prevent clumping. It is also better to chop the zest finely and dry it slightly.
Step 2
Melt the chocolate and butter in a water bath. Add the remaining powdered sugar — 60 g to the hot mixture. Remove from heat and add the red wine. When the mixture cools to room temperature, gradually add the beaten egg and mix well. If you use semi-sweet or sweet wine instead of dry, reduce the amount of sugar by half or more. The mixture should be sweet but not cloying.
Step 3
Add the liquid chocolate mixture to the flour mixture and knead the dough. It is best to roll the dough into a ball and refrigerate for 20-30 minutes.
Step 4
Roll out the chilled dough to a thickness of 1 cm. Use cookie cutters to shape the cookies. Bake the cookies for 20 minutes at 300°F. If you want thinner cookies, you should also reduce the baking time. During baking, the alcohol from the wine evaporates, giving the cookies a bright aroma.
Step 5
Finally, you can decorate the cookies with icing (whip 1 egg white, then add 200 grams of powdered sugar and mix thoroughly; the mixture should be thick; if the icing runs, add more powdered sugar or flour to thicken).
Step 6
This amount of dough yields 2 trays of cookies from a home oven.
