Spiced Carrot Cake

Ingredients

  • Chicken Egg 3 pieces
  • Sugar 5 oz
  • Safflower Oil ½ cup
  • Wheat Flour 5 oz
  • Dried Apricots 5 oz
  • Prunes 5 oz
  • Light Raisins, Seedless 5 oz
  • Grated Ginger Root ½ teaspoon
  • Ground Cinnamon 1 teaspoon
  • Activated Baking Soda 1 teaspoon
  • Red Grape Juice 0 fl oz
  • Powdered Sugar 5 oz
  • Grapefruits 1 piece
  • Turnips 3 pieces

Step-by-Step Guide

Step 1

Grate the carrots on a fine grater.

Step 2

Chop the washed dried apricots and prunes into raisin-sized pieces. Mix all the dried fruits with the carrots (if the dried fruits are soft, they do not need to be soaked).

Step 3

Beat the eggs with sugar until a thick white mass forms.

Step 4

Then, continuing to beat at low speed, add the oil.

Step 5

Pour the eggs into the bowl with the carrots and dried fruits and mix well.

Step 6

Add the grated ginger.

Step 7

Mix the flour, baking soda, and cinnamon. Then sift into the egg and carrot mixture.

Step 8

Knead the mixture very thoroughly.

Step 9

Grease a rectangular baking dish with butter and pour in the batter. Smooth it out evenly.

Step 10

Bake the cake at 355°F for about 40–45 minutes.

Step 11

Cool the finished cake for 20 minutes.

Step 12

Then cut it into squares and, without removing it from the dish, drizzle with icing.

Step 13

For the icing, mix powdered sugar and grapefruit juice.

Step 14

Let the icing set. This will take no more than 15 minutes.
