Spiced butter ice cream with pieces of marzipan and stollen.
Ingredients
- 3.2% Milk 10 fl oz
- 30% Cream 5 fl oz
- Sugar 5 oz
- Salt a pinch
- Cardamom Pods 4 pieces
- Cloves 4 pieces
- Star anise 1 piece
- Ground Cinnamon ½ teaspoon
- Ground Ginger ½ teaspoon
- Cornstarch 3 teaspoons
- Cream Cheese 0 oz
- Marzipan 0 oz
- Stollen Cake 5 oz
Step-by-Step Guide
Step 1
Dissolve the cornstarch in 50 ml of milk and let it sit for a few minutes.
Step 2
In a small saucepan over medium heat, combine the remaining milk, cream, sugar, salt, and spices. Bring to a boil, then remove from heat and let steep covered for 45 minutes.
Step 3
Strain the mixture to remove the spices, return it to the heat, and bring it close to a boil again. Pour in the cornstarch milk and cook, stirring constantly, until thickened. Remove from heat, add the cream cheese, and mix until smooth. Allow to cool to room temperature, then refrigerate overnight.
Step 4
Freeze in an ice cream maker according to the instructions, adding the previously chopped stollen and marzipan in the last couple of minutes of freezing. Transfer the finished ice cream to a container and place it in the freezer for at least 4 hours until firm.
