
Spanakopita or Spinach Pie

Description
The pie turns out very soft, tender, and just melts in your mouth...))) It is best enjoyed hot, straight from the oven, and served with coffee and cream. It's better to soak the feta cheese in cold water for an hour before cooking if someone prefers a milder creamy taste of cheese.
Ingredients
- Frozen spinach discs 15 oz
- Butter 0 oz
- Feta cheese 15 oz
- Potato 1 piece
- Chocolate eggs 2 pieces
- Onion 1 head
- Puff Pastry 1 piece
- Dried Rosemary ⅓ teaspoon
- Fresh basil leaves ⅓ teaspoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Place the frozen spinach in boiling salted water for 2-3 minutes. Drain in a colander and let the water drain.
Step 2
Peel and dice the onion. Heat the butter in a saucepan. Add the onion and sauté for 3 minutes, then add the diced tomato and spices, and sauté for another 5 minutes.
Step 3
Add the spinach, season with salt and pepper to taste. Sauté for another 5 minutes. Stir. Remove from heat, add the eggs and crumbled feta cheese.
Step 4
On a floured surface, roll out the pastry, cut one circle larger than the baking dish and another exactly the size of the dish.
Step 5
Place the larger circle in the dish to cover the bottom and sides. Add the filling.
Step 6
Preheat the oven to 200°C.
Step 7
Cover the pie with the second circle of pastry, pinch the edges. Trim off the excess pastry. Brush the pie with butter. Bake for 30 minutes until a crispy crust forms.
