If your bread machine allows you to set a custom program and specify parameters for each stage, this is the best option. For this type of bread, you should choose the following settings: Preheat — 0 minutes Kneading 1 — 8 minutes Kneading 2 — 22 minutes First rise — 1 hour Second rise — 1.5–2 hours (the longer it rises, the fluffier the bread will be, but it may develop a slight tang — the choice is yours) Baking — 1 hour 15 minutes, weight 1000 grams, medium crust.

  • Sourdough Bread 0 oz
  • Water 15 fl oz
  • Sugar 0 oz

  • Butter 0 oz

Step-by-Step Guide

Step 1

The night before, take the wheat sourdough starter out of the fridge (if it’s been in the fridge, let it warm up for 30–60 minutes) and mix it with 100 grams of flour and 100 grams of water to make a preferment. Cover it with plastic wrap or a clean kitchen towel and leave it overnight.

Step 2

In the morning, take the butter out of the refrigerator in advance so that it softens.

Step 3

Add all remaining ingredients to the bread machine (except for the butter) along with the starter. Different bread machines may have different requirements: some require wet ingredients to be added first, followed by dry ones, while others do the opposite. Make sure to add the yeast to the flour so that it doesn't come into contact with the water and salt.

Step 4

Add the butter at the end of the kneading process, following the bread machine's signal.

Step 5

You can bake in different modes: wheat bread or French bread — the result may vary slightly, so it's worth trying both to choose the best one. This also depends on the model of the bread maker; despite having the same name, the modes can differ in duration, kneading intensity, and baking temperature.

Step 6

It's best to cool the bread on a wire rack — this allows it to cool more evenly and prevents it from becoming soggy.
