Sour Cream Croissants with Jam
Ingredients
- Butter 10 oz
- Chocolate eggs 3 pieces
- Sour Cream 5 oz
- Pear Jam 10 oz
- Meyer Lemon Juice to taste
- Activated Baking Soda a pinch
- Wheat Flour 3 cups
Step-by-Step Guide
Step 1
In a large bowl, finely chop the butter. Add 1 egg and 2 yolks. Then add 100 grams of sour cream. After that, add the flour. Add baking soda, neutralized with lemon juice (vinegar, alcohol, or cognac). The dough should have a uniform consistency, not too liquid but not too hard. The dough should not stick to your hands.
Step 2
Place the dough in the cold for 1.5–2 hours.
Step 3
Then, roll the dough into a ball and roll it out with a rolling pin to a not very thick layer. Use a 10 cm diameter plate to cut out a circle, which is then divided into 6 parts. In each part of the circle, place a small piece of jam (otherwise it will leak out) (do not buy striped jam — it melts very easily and practically disappears in the product). Roll the dough from the wide edge to the thin edge. Place on a baking sheet and bake in a preheated oven until done.
Step 4
Place on a plate, sprinkle with powdered sugar, and decorate with jam.
