Ingredients
- 20% Sour Cream 20 oz
- Potato protein 2 tablespoons
- Brown Sugar 10 oz
- Puff Pastry 1 piece
- Fresh Berries 5 oz
Step-by-Step Guide
Step 1
Whip the sour cream with sugar, gently add the starch, preferably through a sieve to avoid lumps.
Step 2
Roll out the previously thawed pastry: it usually comes in a roll, in which case the dough should be folded in half and rolled out that way.
Step 3
Line a baking sheet with parchment paper, place the pastry on it. Evenly distribute the berries over the surface, then pour the sour cream mixture on top.
Step 4
Bake at a temperature of 170–375°F for 40 minutes to 1 hour. You can check for doneness by looking for cracks on the surface of the sour cream — this means it has thickened enough. The pie should rest overnight in a cool place; it's better not to serve it hot, as it may burn you!
