Soup with Tuscan Kale and Carrots

Ingredients

  • Carrots 2 pieces
  • Vegetable Broth 4 cups
  • Tomatoes 15 oz
  • Tuscan kale 15 oz
  • Chopped Basil Leaves ¼ cup
  • Green onion tops 0 oz
  • White Beans 15 oz
  • Balsamic Vinegar 1 tablespoon

Step-by-Step Guide

Step 1

Pour 2 cups of water into a pot, add the carrots, broth, and canned tomatoes, and bring to a boil over medium heat.

Step 2

Place the kale, whole basil leaves, and whole green onion tops in a steamer.

Step 3

Steam for 5-7 minutes, turning the kale once with tongs. Remove and discard the basil and onion.

Step 4

Add the kale, beans, and vinegar to the soup, and simmer.

Step 5

Season with salt and pepper to taste.

Step 6

Add chopped basil and onion before serving.
