  • Beef Kidneys 10 oz
  • Pork Skewers 2 pieces
  • Pork Skewers 20 oz
  • Bay leaf 2 pieces
  • Bacon 5 oz
  • Garlic 4 cloves
  • Sauerkraut 30 oz
  • Salad Potatoes 3 pieces
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Soak the kidney beans in cold water at room temperature for 4 hours (or overnight). Drain the water, rinse the beans, and place them in a pot. Add the smoked pork shanks, ribs, bay leaves, and pour in 12 cups of cold water. Place the pot over high heat and bring to a boil.

Step 2

Chop the bacon and garlic, mix them into a paste, and add to the pot. Reduce the heat, cover the pot, and simmer for about an hour until the beans are soft.

Step 3

Place the sauerkraut in a dish with cold water, then drain it in a colander. Gently squeeze the sauerkraut and add it to the pot. Peel the potatoes, cut them into quarters, and add them to the pot. Cook the soup for another 30 minutes until the potatoes are soft.

Step 4

Using a slotted spoon, remove the potatoes from the pot, mash them, and return them to the pot. Season the soup with salt and pepper and cook for another 20-30 minutes. Then, remove the meat from the bones, add it to the soup, and take out the bay leaves. Serve the finished soup in bowls and enjoy your meal!
