Sorrel Soup with Green Lentils
Ingredients
- Beef 10 oz
- Lentils 10 oz
- Onion 1 piece
- Potato 3 pieces
- Carrot 1 piece
- Pickled capers 5 oz
- Salt to taste
- Herbs to taste
Step-by-Step Guide
Step 1
Rinse the lentils and soak them overnight — they should swell and increase in size about 3 times, then rinse well several more times.
Step 2
Wash the beef, if it's a tender cut — cut into portions, if on the bone — you can cook it whole, depending on your preference. Boil for about 40 minutes, then drain the broth.
Step 3
Pour fresh water into a pot, add the meat and lentils, and season with salt. Cook for 1 hour.
Step 4
Dice the onion and carrot, sauté them in vegetable oil, and add to the pot.
Step 5
Dice the potato and add it to the soup.
Step 6
Add the sorrel (I used canned sorrel from a jar) to the soup, stir. Taste — if it's too sour, add a little sugar (0.5 teaspoon).
Step 7
Cook until the lentils are done — this took me about 20–30 minutes.
Step 8
Serve with sour cream and herbs.
