Description
The soup can be made not only from sorrel but also from spinach.
Ingredients
- Sorrel 15 oz
- Water 0 qt
- Onion 5 oz
- Butter 0 oz
- Wheat Flour 0 oz
- Chicken Broth 20 fl oz
- 10% cream 5 fl oz
- Nutmeg a pinch
- Lemon 1 piece
- Whole egg 2 pieces
- Salt to taste
Step-by-Step Guide
Step 1
Boil the sorrel and finely chopped onion in water, allowing them to simmer for about 10 minutes, then strain through a sieve.
Step 2
Melt the butter in another pot and mix it with the flour and salt, then, while continuously stirring, gradually pour in the chicken broth. Stir until the broth comes to a boil.
Step 3
Add the strained sorrel to the broth and cook for another 10 minutes over low heat. Add the cream and nutmeg to taste. Bring to a boil again. Taste once more and add salt to taste.
Step 4
Serve with lemon sliced into thin rounds and grated egg yolk.
