
Sorrel Cream Soup

Description
You can also add spinach along with the sorrel. It is recommended to serve with sour cream and croutons.
Ingredients
- Sorrel 2 bunches
- Onion 1 head
- Salad Potatoes 2 pieces
- Chicken Broth 0 qt
- Cream (40%) 10 fl oz
- Butter 0 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Wash and dry the sorrel, separating the leaves from the stems. We will only use the leaves.
Step 2
Chop the onion and potatoes into small (1–2 cm) cubes, sauté in butter. This can be done directly in the soup pot.
Step 3
Once the onion turns golden, add the sorrel and continue to sauté, stirring, for another 5 minutes.
Step 4
Pour the chicken broth into the pot with the vegetables, add the cream. Cook for 20 minutes (about the time needed for the potatoes and onion to become soft).
Step 5
Add salt and pepper.
Step 6
Remove the pot from the heat and let the soup cool slightly.
Step 7
Blend the contents of the pot in a blender. The soup is ready.
