Somerset Cider Bread
Ingredients
- Wheat Flour 35 oz
- Coarsely Ground Rye Flour 10 oz
- Water 10 fl oz
- Salt to taste
- Cider 15 fl oz
- Dry yeast 0 oz
Step-by-Step Guide
Step 1
For the sponge, mix 200 g of wheat flour, 50 g of rye flour, 5 g of fresh yeast, salt, and 175 ml of water. Stir and let it rest for 4 to 6 hours.
Step 2
Add 10 g of yeast, 750 g of wheat flour, 250 g of rye flour, salt, 150 ml of water, and 450 ml of dry cider to the sponge. Knead the dough, form it into a ball, and let it rest for 45 minutes.
Step 3
Place the dough on a surface, knead it, form it into a ball, and cover it. Let it rest for another 45 minutes.
Step 4
On a floured surface, divide the dough into 4 parts and shape them into 4 loaves. Place the loaves seam side down on a baking sheet lined with a towel and dusted with flour, cover, and let rise for 1.5 hours.
Step 5
Preheat the oven to 480°F.
Step 6
Transfer the loaves onto an inverted baking sheet and make a long diagonal cut on each loaf with a sharp knife.
Step 7
Spray the oven walls with water from a spray bottle, place the loaves inside, and bake for 10 minutes.
Step 8
Reduce the temperature to 390°F and bake for another 35 minutes.
