Soljanka Soup
Ingredients
- Turkey 10 oz
- Leek 0 oz
- Carrot 0 oz
- Pickled Cauliflower 5 oz
- Passata Tomato Sauce 1½ tablespoons
- Chili jam ½ teaspoon
- Capers 3 tablespoons
- Cucumber Brine 1½ tablespoons
- Olive Oil 1½ tablespoons
- Habanero Pepper 0 oz
- Bay leaf 1 piece
- Ocean salt to taste
- Lemon-Pepper Mix to taste
- Chicken Broth 1⅕ liters
Step-by-Step Guide
Step 1
Dice the carrot into small cubes.
Step 2
Chop the leek coarsely.
Step 3
Slice the cucumbers into thick rounds.
Step 4
Finely chop the jalapeño.
Step 5
Cut the ham into strips.
Step 6
In a heated skillet, add the ham, carrot, and leek to the oil.
Step 7
Sauté over high heat for about 3 minutes, then stir, season with the pepper blend, add the tomato paste and chili sauce. Mix and reduce the heat slightly.
Step 8
After 5 minutes, add the cucumbers and jalapeño. Stir.
Step 9
After 1 minute, remove from heat and transfer to a deep pot.
Step 10
Pour in the broth and set to high heat. Once boiling, immediately reduce the heat and add the bay leaf.
Step 11
After 12 minutes, pour in the cucumber brine and add the capers. Season with salt and pepper.
Step 12
After 3 minutes, remove from heat. Serve in portions.
