Solanka with Honey Mushrooms

Ingredients

  • Salted honey mushrooms 10 oz
  • Pickles 3 pieces
  • Carrot 1 piece
  • Salad Potatoes 5 pieces
  • Passata Tomato Sauce 2 tablespoons
  • Water 5 qt
  • Garlic 2 cloves
  • Lemon to taste
  • Pitted olives 2 tablespoons
  • Vegetable Oil 4 tablespoons
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Place a pot of water on the stove and add the honey mushrooms to cook. Boil for at least 40 minutes.

Step 2

Grate the carrot, finely chop the onion, and sauté them in a pan with vegetable oil.

Step 3

Finely chop the pickles and add them to the pan with the onion and carrot, then add the tomato paste and simmer for about 10 minutes.

Step 4

Peel and chop the potatoes into small pieces. When the honey mushrooms are almost ready, add the potatoes to them.

Step 5

Transfer the sautéed vegetables to the pot, add salt, pepper, and bay leaf.

Step 6

Slice the olives into rings and add them to the solanka along with the brine. Add the finely chopped garlic and parsley.

Step 7

When serving, add a couple of slices of lemon to the solanka.
