
Soft Chocolate-Orange Caramel

Description
Variations of caramel can be quite diverse; it all depends on your imagination. For example, you can also add lemon zest or vanilla to the mixture, really — anything you like, to taste.
Ingredients
- Butter 0 oz
- Cream (40%) 10 fl oz
- Sugar 10 oz
- Gingerbread-flavored syrup 5 fl oz
- Liquid dark chocolate 5 oz
- Orange zest 1 piece
Step-by-Step Guide
Step 1
Melt the butter in a saucepan, add the cream, sugar, and syrup. Cook uncovered, stirring occasionally. Cooking time is 20–30 minutes, depending on the size of the saucepan (the wider it is, the less time it takes). The mixture becomes stretchy when the temperature reaches 255°F.
Step 2
Grate the zest of one orange finely and add it to the caramel. The chocolate can be grated or simply broken into pieces and added to the caramel. Remove the saucepan from the heat — the chocolate should not boil. Stir the caramel until the chocolate is completely melted.
Step 3
Line a mold (approximately 18x20 cm) with parchment paper. Pour the caramel into the mold and wait for it to cool slightly.
Step 4
Cut into pieces approximately 1.5x4 cm. Place in the refrigerator until completely cooled.
