Description
Sochni are representatives of classic Russian pastry, little pies made from unleavened dough with a cottage cheese filling. By the way, they were once simply called sochni.
Ingredients
- Butter 0 oz
- Sour Cream 5 oz
- Wheat Flour 15 oz
- Sugar 10 oz
- Salt a pinch
- Chicken Egg 2 pieces
- Activated Baking Soda 1 tablespoon
- Cottage cheese 5 oz
Step-by-Step Guide
Step 1
Whip 100 grams of sour cream with 200 grams of sugar until fully dissolved.
Step 2
Add one egg, softened butter, and salt, and mix until smooth.
Step 3
Sift 400 grams of flour with baking soda and gradually incorporate it into the sour cream mixture, reserving about a quarter of the flour for later.
Step 4
Transfer the dough to a countertop and knead it, adding the remaining flour.
Step 5
Cover with plastic wrap and let it rest while preparing the filling.
Step 6
For the filling, beat the egg whites with 50 grams of sugar until stiff peaks form. Combine the egg whites with the cottage cheese, adding one tablespoon of sour cream and flour.
Step 7
Roll out part of the dough to a thickness of about 3 mm. Cut out circles with a diameter of 8–10 cm.
Step 8
Place a small amount of filling on one half of each circle, then cover it with the other half, allowing some filling to peek out. Pinch the edges slightly (only near the fold of the dough).
Step 9
Transfer the filled pastries to a baking sheet and brush them with egg yolk.
Step 10
Place in an oven preheated to 355°F for 20–25 minutes.
