Ingredients

  • Chickpeas 5 oz
  • Water 10 fl oz
  • Olive Oil 4 tablespoons
  • Salt to taste
  • Ground Black Pepper to taste
  • Herbes de Provence to taste

Step-by-Step Guide

Step 1

You can use ready-made chickpea flour. If using whole chickpeas, grind them in a coffee grinder or blender. Sift the resulting flour.

Step 2

Add water, 3 tablespoons of oil, salt, pepper, and herbs. Mix well. The dough should have a consistency similar to pancake batter. Let the dough rest for 1 hour.

Step 3

Preheat the oven to 220-465°F. Pour the dough onto a baking sheet or into a mold. The larger and flatter the baking sheet, the less time the flatbread will take to bake.

Step 4

Bake for 5-10 minutes. The top of the flatbread should be nicely browned, while the bottom remains soft.

Step 5

Serve topped with chopped vegetables and/or cheese.
