  • Milk 30 fl oz
  • White Beans 1 piece
  • Sugar 5 oz
  • Egg white 6 pieces

Step-by-Step Guide

Step 1

Bring 480 ml of milk to a boil and remove from heat. Split the vanilla bean lengthwise and add it to the milk. Cover and let steep for 15 minutes.

Step 2

We will need 4 egg whites and 6 yolks (the 2 remaining egg whites can be frozen for use in another dish).

Step 3

Whisk the yolks with 67 g of sugar.

Step 4

Remove the vanilla bean from the milk. Use a knife to scrape the vanilla seeds and return them to the milk. Gently temper the yolks while continuing to whisk.

Step 5

Pour the mixture into a saucepan and place it over low heat, stirring constantly with a wooden spoon. Cook for about 20 minutes. The mixture should be thick enough to not run off the spoon.

Step 6

Remove the mixture from heat and strain it into a shallow serving dish. Cool and refrigerate.

Step 7

Whip 4 egg whites with 67 g of sugar until stiff peaks form.

Step 8

Pour the remaining 480 ml of milk into a saucepan and bring to a gentle boil. Using a large spoon, form large snowballs from the egg white mixture and cook them in the boiling milk for about 30 seconds on each side. The key is not to overcook. Place the snowballs on a dry towel.

Step 9

Heat the remaining sugar and 80 ml of water in a small saucepan over high heat until the mixture caramelizes to an amber color. Remove the saucepan from heat to prevent the caramel from burning. Let it sit for 5 minutes to allow the caramel to set slightly.

Step 10

Take the cream out of the refrigerator and use a slotted spoon to place the snowballs on top. Hold the saucepan with the caramel and bring it to the serving dish. Dipping a fork into the caramel, drizzle it over the dessert in a caramel web.

Step 11

Serve immediately.
