  • Ground Almonds 3 tablespoons
  • Powdered Sugar 2 tablespoons
  • Butter 5 oz
  • Wheat Flour 10 oz
  • Whole egg 1 piece
  • Milk 2 tablespoons
  • Semi-soft cream cheese 0 oz
  • Mascarpone Cheese Unagrande 5 oz
  • Canned water chestnuts 10 oz

Step-by-Step Guide

Step 1

For the tartlets, mix the flour, powdered sugar, and ground almonds, and chop with butter until crumbly. Lightly beat the egg yolk with milk and pour it into the dough. Gently knead the dough with your fingertips, wrap it in plastic wrap, and refrigerate for 30 minutes. Grease the tartlet molds with butter and lightly dust with flour.

Step 2

Divide the dough into 12 pieces, roll each into a circle, place in the molds, and press down to the bottom. Cover each with aluminum foil and bake in a preheated oven at 200 °C (392 °F) for 10–12 minutes. Remove the foil and bake for another 3–5 minutes until golden brown. Remove the bases from the molds and cool on a rack.

Step 3

For the filling, drain the syrup from the canned cherries, and thaw frozen cherries at room temperature, then drain the juice. Mix the mascarpone with the cottage cheese and powdered sugar, and distribute among the tartlets. Decorate each pastry with berries and generously sprinkle with powdered sugar.
