Smooth Pho
Ingredients
- Veal Tenderloin 10 oz
- Ginger 0 oz
- Onion 2 heads
- Fish Oil 3 spoons
- Cinnamon 2 pieces
- Star anise 5 pieces
- Green peppercorns a pinch
- Clove a pinch
- Rice Noodles 5 oz
- Peanut Sprouts 5 oz
- Campbell's Beef Broth 0 qt
- Scallions 3 stalks
- Cilantro 3 sprigs
- Salt to taste
Step-by-Step Guide
Step 1
Cut the vegetables: ginger (thinly), two onions (halved), green onions (julienned), and finely chop the cilantro leaves.
Step 2
Pour three tablespoons of fish sauce into the beef broth and add four halves of onion, ginger, two cinnamon sticks, a little star anise, black peppercorns, and cloves. Bring the broth to a boil and let it simmer on low heat for another thirty minutes.
Step 3
Strain the broth, return it to the stove, bring it to a boil, and add flat rice noodles. Cook for five minutes.
Step 4
Slice the beef tenderloin into very thin slices. Using a slotted spoon, remove the almost cooked noodles from the broth and place them onto plates. Add a handful of raw beef and soybean sprouts to each plate. Pour the broth over everything, then sprinkle with cilantro, green onions, and a squeeze of lime juice. Serve immediately.
