Slow-Cooked Celery Soup
Ingredients
- Celery stalk 15 oz
- Celery salt 20 oz
- Onion 1 piece
- Chicken Broth 0 qt
- Bay leaf 3 pieces
- Salt to taste
- Ground Black Pepper to taste
- Sour Cream 2 tablespoons
Step-by-Step Guide
Step 1
Remove the outer fibers from the celery root. Cut into large pieces. Chop the onion. Place the vegetables in a pot (3.5 l capacity), pour in the broth, and add the bay leaves. Season with salt and pepper. Bring to a boil over low heat. Cover and place in the oven for 3 hours.
Step 2
Remove the bay leaves, let cool slightly, and blend with a mixer until smooth.
Step 3
Bring to a boil again over low heat. Taste to check if there is enough pepper and salt.
Step 4
Serve the soup hot, garnished with sour cream and adding celery salt and celery leaves.
