Simple Tomato Soup
Ingredients
- Tomatoes 25 pieces
- Onion 1 head
- Garlic 12 cloves
- Sea Salt to taste
- Ground Black Pepper to taste
- Olive Oil to taste
- Vegetable Broth 0 qt
- Basil leaves to taste
- Cucumber 0.5 pieces
Step-by-Step Guide
Step 1
Chop the onion.
Step 2
Peel the garlic.
Step 3
Peel half of the cucumber and chop it finely.
Step 4
Preheat the oven to 200 °C (392 °F).
Step 5
Cut the tomatoes (use ripe, small ones) in half and remove the seeds with a teaspoon.
Step 6
Place them in a deep dish (one that can go in both the oven and on the stove).
Step 7
Add the onion and garlic, season generously with salt and pepper, and then add olive oil liberally.
Step 8
Put the vegetables in the oven and roast for 30 minutes until the onion is golden and the tomatoes are slightly browned.
Step 9
Remove the dish from the oven and place it on the stove over medium heat.
Step 10
Add a bit of broth and stir for 2-3 minutes, then pour in the remaining broth and bring to a boil.
Step 11
Remove from heat and let cool slightly, then blend until smooth.
Step 12
Season with salt and pepper to taste.
Step 13
Pour the soup into bowls, sprinkle with fresh basil, and add a bit more olive oil.
Step 14
Add the chopped cucumber.
