Ingredients
- Pumpkin flesh 15 oz
- Butter 5 oz
- Eggs 3 pieces
- Lemon 1 piece
- Brown Sugar 5 oz
- Ground Ginger 1 teaspoon
- Baking Soda 1 teaspoon
- Ground Cinnamon ½ teaspoon
- Wheat Flour 1 cup
Step-by-Step Guide
Step 1
Grate the pumpkin.
Step 2
Zest the lemon using a fine grater. Squeeze the juice from the lemon (50 g).
Step 3
Beat the eggs with the sugar.
Step 4
Melt the butter and gently mix it into the beaten eggs with sugar. Add the lemon zest, cinnamon, and ginger.
Step 5
Carefully fold in the grated pumpkin, then the flour. Mix with a mixer.
Step 6
Dissolve the baking soda in lemon juice and add it to the batter.
Step 7
Place the batter in a baking dish in the oven for 40–50 minutes at 355°F.
