Simple Minestrone with Pumpkin
Ingredients
- Onion 1 head
- Tomatoes 1 piece
- Celery stalk 2 pieces
- Carrot 2 pieces
- Courgette 1 piece
- Sweet Potato 1 piece
- Butternut Squash 20 oz
- Chicken Broth 15 fl oz
- Stelline Pasta 0 oz
- Salt to taste
- Ground Black Pepper to taste
- Olive Oil 0 fl oz
- Parmesan Cheese to taste
Step-by-Step Guide
Step 1
Preheat the oven to 390°F (gas mark 6).
Step 2
Peel and chop the onion, celery, carrot, and zucchini. Peel the sweet potato, then cut it in half. Cut the butternut squash into wedges.
Step 3
Place all the vegetables on a baking tray and drizzle with olive oil. Roast for about 1 hour or until all the vegetables are soft, then transfer to a large bowl.
Step 4
Add a little boiling water, then blend with an immersion blender to your desired consistency.
Step 5
Transfer the blended vegetables to a pot, add the broth, then season with salt and black pepper.
Step 6
Add the pasta, then stir in the soup, adding a little more water if the soup is too thick, as the pasta will absorb water.
Step 7
Bring to a boil and cook for 10–12 minutes or until the pasta is done.
Step 8
Serve, generously grated with Parmesan cheese.
