Description

It's great to have ready-made shortcrust pastry in the fridge, so preparing the pie will take just an hour.

  • Donut Peaches 20 oz
  • Cottage cheese 10 oz
  • Honey 2 spoons
  • Meyer Lemon Juice 2 spoons
  • Wheat Flour 10 oz
  • Butter 5 oz
  • Almond 0 oz
  • Whole egg 1 piece
  • Salt a pinch
  • Sugar 5 oz
  • Starch film 1 tablespoon

Prepare all the ingredients.

Cut the cold butter into cubes and place them in the mixing bowl.

Add the wheat flour, almond flour, 50 grams of sugar, and salt.

Blend everything in a mixer until you achieve a fine buttery crumb.

Mix the yolk with 4 teaspoons of cold water. Pour the liquid into the dough.

Knead the dough by hand until it forms a tight, elastic ball. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 3 hours.

Mash the cottage cheese with a fork until it becomes creamy. If the peaches are not very sweet, you can add a bit of sugar to the cottage cheese, no more than 50 grams.

Peel the peaches, cut them in half, and remove the pits. If the peaches are large, slice them into wedges.
