Simple Chocolate Cake

Ingredients

  • Egg white 5 pieces
  • Ocean salt a pinch
  • 70% Dark Chocolate 10 oz

Step-by-Step Guide

Step 1

Preheat the oven to 480°F.

Step 2

Break 2/3 of the chocolate into pieces and melt it in a water bath without stirring.

Step 3

Separate the egg whites from the yolks. Whisk the yolks (they should lighten slightly) and combine them with the melted chocolate.

Step 4

Whisk the egg whites with a pinch of salt until stiff (be careful not to overwhip, or the whites will start to release water!), add to the chocolate, and mix (do not mix too long, or the air will escape — the mixture should have a mousse or soufflé consistency).

Step 5

Line a 10–15 cm diameter baking pan with parchment paper greased with vegetable or butter, pour in the chocolate mixture, and bake in the preheated oven for 8 minutes — no more and no less. Remove from the oven and cool for half an hour, then refrigerate overnight or for 12 hours.

Step 6

Melt the remaining chocolate, pour it over the cake, and return it to the refrigerator for 10 minutes. Cut the cake with a hot knife previously dipped in boiling water.
